This recipe suggests starting the dish on the hob then putting in the oven. My oven is on the blink so I just left it on the hob, topping up with water as necessary, until the potatoes were tender. This made the bottom layer of onions caramelise and they were probably the most delicious part of the dish! You could leave out the bacon as the chorizo already brings plenty of flavour.
