Potato Salad such as it should be. Very delicious, classic with pickled gherkins and mayonnaise (but not too much either), and not with cucumber and no mayonnaise at all, like this version. If you use sausages, though, be warned: much depends on their quality. I bought two can of two different brands - the first I just threw away (not edible!), the second was okay but could have been better. If in doubt - you can always use bacon cubes instead.

This recipe can easily be prepared in advance, preferably while you're already busy cooking anyway - if not, you might think it a lot of work for just a humble potato salad. You'll need a lot of pans (or a lot of time) for cooking the potatoes, the eggs and the onions, so don't do this when you're short on hot plates.
