This was beautiful to look at and delicious to eat. I did cut my tomato into smaller wedges to make it easier to eat. Since I couldn't find watercress in my local market I got some really good looking argula and used that.
I love the taste of really fresh raw corn and it was delicious in the simple chicken salad. Instead of using rotisserie chicken I cooked my own boneless, skinless chicken breasts in some water and spices.
You wouldn't think the dressing for the chicken would be that good since it's only a small amount of mayonnaise, some juice from the tomato, chives and a little salt and pepper but it's wonderful.
Also you drizzle a little of tomato juice over the greens and with the addition of some fresh cracked pepper and just a pinch of salt, eaten with the tomato and chicken salad it's perfect. Summer's here.
