Rating 3 - Pretty good, but not so amazing that I'd make it again.
Caveats - I made this with israeli cous cous, which was a suggested substitute. I also roasted the asparagus in the oven while prepping the rest of the ingredients. I later cut it up and added it to the pot at the end instead of letting it cook with the cous cous because I prefer the flavor of roasted. I also used thighs instead of chicken breasts, which is the norm in my house.
Generally, this was a really good meal. It had a lot of flavor and I have no complaints about that at all. It is truly a one pot meal. The combination of lemon and parm mixed in at the end is something I've never tried before and was pleasantly surprised.
I also could not help but love that this recipe was designed for 2 and I didn't have to cut down any of the ingredients!
The reason for only 3 stars is that I don't think I'd make it again. I love ATK, but this recipe had too many steps for a weeknight/simple dish. I'm fine with a long list of steps if I'm making one of their more involved dishes.
