Simple simple simple. And delicious. The butter can be done in a matter of minutes (while your oven pre-heats to 500), and the salmon takes even less time ( a quick 60 second sear, flip the fish and stick it in the oven for an additional 2-4 minutes (depending on how you like your salmon). Served on top of jasmine rice with a side salad of sugar snap peas, sliced cucumbers, and red pepper in a mild Asian vinaigrette.

June 2 -- Made with basil/chive butter. The sear-roast technique is a real winner in terms of producing perfectly cooked fish.
