Martha Rose Shulman adapted this recipe from one published in "Diet for a Small Planet" - a book that led me to be vegetarian for more than a decade. This could have been a strong enough selling point on its own, but I was also intrigued by a coconut-sesame combination. I like each of these flavors on their own, but don't think I've ever had them combined.
It is a very very good recipe - these bar cookies have two layers. A whole wheat/butter/sugar layer on the bottom baked up crispy, and the egg-coconut-honey-sesame layer on top was a perfect accompaniment.
The sesame seeds are to be coarsely ground. I used my immersion blender, which has its own small chopping bowl. It took about 2 minutes for the sesame seeds to look chopped.
You might see from the pictures - I ran out of the white sesame seeds, and so used a combination of white and black.
If, like me, you are a fan of sesame seeds, you will love this one. But be warned -- they might taste a little too "healthy" to kids.

I'm so intrigued by the look of these, I may try and veganize them. I think they sound delicious!
