A very rich buttery scone, but the pear flavor was too far in the background.
I used perfect slightly under-ripe pears, and they roasted beautifully. The dough came together easily, and while it was very wet, I could pat it out without too much trouble. They also baked up beautifully with their egg wash and sprinkle of large-crystal sugar.
I was hoping for a big pear flavor, but really couldn't taste it. When a bite included chocolate (and most bites did), its assertive taste took over and the delicate pear flavor was lost. I also felt that the scones were too rich -- too much butter - despite having substituted skim milk for the cream.
However - teenagers in the house? They loved the big chocolate flavor and didn't mind missing the pear.
