Saw a reference to tomato soup cake in a mystery book. Sure enough--a good recipe in the Joy. This cake is surprisingly good. Certainly simple. Tastes like old-fashioned spice cake.

As a child I would look at this recipe and wonder if it was really weird. This is the first I've heard of someone who made it. Thanks for clearing up what has been a life-long mystery!

This brings back memories--my grandmother made a tomato soup cake--one of a group of recipes that came about during wartime rationing and which she continued to make on occasion. I remember the cake as being quite good -- as you say, an old-fashioned spice cake.
