I quite liked this but found the stuffing too bland - the proportion of breadcrumbs to apricots is too high, and I also think a little lemon juice and zest would help, and maybe something in the way of spices. I would certainly try this again though.

My family loves this recipe. Excellent with either roast pork or beef & gravy. We also use these with sauerkraut and kielbasa.
