This is a fantastic recipe. It produces a cookie that is fluffy and sort of cakey. The glaze on the top is easy to make and tasty.
Make sure to watch the baking times. My oven runs a little warm and the cookies were done 3 minutes to spare. Giada calls for cookies using 2 tablespoons of dough, so I used a #24 disher.
I've made these using regular and Meyer lemons. If you are using Meyers, I suggest you add a little extra zest to the dough and glaze because it is sweeter/less tangy to begin with.
