Well, the marmalade lovers in the family weren’t disappointed but I wouldn’t recommend this recipe to those who aren’t. The ice cream is creamy and orange-y with the bitterness of the marmalade (so use a brand that you enjoy); it’s good on its own, but better with the chocolate.
It’s an easy custard based ice cream with few ingredients that relies on the marmalade for most of its sweetness. Single and whipping cream are suggested….I used a blend of 1% milk and whipping cream to approximate the fat content of single cream.
I served it with just a drizzle of chocolate sauce but it would be excellent with a brownie.
