Seafood and cheese? Most definitely. This dish was fantastic.
The shrimp remained sweet and juicy and were nestled in a fresh tasting tomato sauce flavoured with brandy (I used cognac). The feta topping added creaminess and tartness without being particularly cheese-y. Don’t omit the dill……it seemed to bring all of the flavours together. And you get these results in very little time, with very little effort. I served it with this simple asparagus salad, one of the recommended sides.
I’ve avoided ordering this dish in Greek restaurants – something I’ll no longer do…
