Bright tasting starter that stimulated the taste buds.
I had a particularly sweet and flavourful fennel bulb so the simple dressing of olive oil, lemon (both zest and juice) and capers was all that was needed to enhance its flavour. I sliced the fennel with a knife but I’d pull out the mandoline and shave it for a more elegant presentation for company.
