Lovely orange cake, dense but very moist, and delicious with a strong cup of coffee or tea.
Each source of orange flavour (juice, zest, marmalade, orange blossom syrup) is noticeable and adds a different element to the cake; the coconut is very subtle and adds to the cake’s texture. You do want to make these ahead as recommended as the flavour develops and improves over time.
I baked the recipe as 2 small loaves; each cake yielded 14 slices.
