Excellent week-night main course. Simple prep (mix of cracked coriander, dijon mustard and EVOO rubbed on chicken breasts) and quick grilling time of 8-10 minutes. While the chicken grills then rests for 5 minutes, it is a matter of minutes to make the vinaigrette ... which is a delicious accent for the chicken. Served over a salad of romaine, cucumbers, tomatoes and the dressing worked well for both meat and greens.
