Lovely pancakes - and this recipe needed only one bowl. Baking powder and baking soda ensure a good rise from the batter.
We saved some batter to cook the next day - it was very thick, and so thinned it with a bit of milk. Cooked up OK, but not nearly as nice as for day 1.

I've made this recipe many times now and it has not failed me, even on a back country hut trip in the dead of winter! Yes the batter is thick but that is the style of the pancake: light and fluffy. It easily accepts additions like mini chocolate chips, banana slices, etc.

This pancake batter is very thick so it's hard to cook the pancakes all the way through. I have found better recipes.
