I made a half recipe of this. Plum tomatoes are not in season, so I used oven-dried (plum) tomatoes from the freezer. They aren't peeled, but worked fine. This is a fairly simple dish, but quite tasty with ginger and a bit of cayenne along with the broccoli...

We really like this and I've made it several times. I usually don't use the breading (breadcrumbs and egg whites). Instead I just cook them like mini lamb burgers.
The patties can be prepared ahead and cooked quickly just before serving.
