Great way to make lovely and tasty garlic roasted potatoes. I didn't have parsley so I just omitted that although I'd use it if I had it. These were still great and a nice side for meatloaf.

These are easy to make and are a great side dish with the Perfect Roast Chicken in the Barefoot Contessa Cookbook.
