Brown Rice Pudding

Very simple and really comforting. This was the best brown rice pudding I have had, perhaps because you are starting with cooked rice?? In the past my brown rice pudding has always been a little to al dente to be truly enjoyable, but not so here - really creamy. The cornstarch was a first for me but seemed to thicken it nicely without any weird flavor. I did add a generous teaspoon vanilla and skipped the coconut and raisins.
