Blueberry Pie Bars

These are EASY to throw together and present nicely. Flavor wise I think a lot depends on your berries - mine were good (not great) so my bars were good (not great). I think I could have added some lemon zest to dial up the flavor. I would like to try these with peaches or strawberries, perhaps with a different spice (cardamom, ginger?). Though you feel like you are making a custard, the final product is not custard-y which was fine with me. I do love the simplicity of this recipe and I will definitely be trying this again!
