Another good muffin from this book. I wanted them plain so I left out the pecans and topping, and also added powdered ginger. Eggs from my sister’s chicks. 1 medium sweet potato resulted in the correct amount of prepared mash, so I would stick to that. These are not too sweet and so are good for any time of day. Will repeat.
