Difficulty: Easy

These are good muffins, containing apples and oat bran. I used one egg and one flax egg and replaced butter with olive oil. Resulting muffins were quite dense and substantial in a good way. All in all, I do prefer the apple muffins in The Breakfast Book so I will continue to make those.

Wd like to find the apple muffin recipe in my book, The Breakfast Book, by by Marion Cunningham. So many recipes there. Do I have wrong book? Thanks.
