This is basically a form of dirty rice, and is predictably good; we enjoyed it with some veggie sausages. I did switch a few things; I soaked my rice overnight and also soaked the lentils for about 30 min in salted water. I used oil for sautéing the onions, then removed those from the pan and sautéed mushrooms and garlic. I also substituted Kashmiri masala for the curry powder and had to omit the parsley. I used my own chicken stock but this would be easy to make vegan by using veg stock or wate...
