This is an amazing dressing. I usually make 1/2 the recipe and omit the shallots. I use a very special balsamic with black garlic (Francois Lambert from Québec) but I think this would be good with any balsamic. Great dressing for any sharp salad or even on cooked veg such as bok choy.
