This made a delicious and easy meal. I used BC black cod from Fisherfolk (an excellent black cod) and also increased the rice quite a bit. I used brown rice as that’s what I had on hand. I had Ontario bok choy and that worked great with the stated oven temp and timing of 20 min. At that point the cod was perfectly cooked and the rice was getting toasty. Will def make this again and I’m sure other vegetables would work well.
