SUNSHINE SPECIAL

A favorite we've been enjoying for years, even decades. We love Mexican food and this crustless quich-like dish has some of those flavors and green chiles (Anaheim). Great for reheating in microwave too. Husband loves it with Pace Picante sauce added at table. Sour cream dollops are a must for me. Yum. Love. I believe I've posted it at my website at some point in the past. (If not, I will get to it/do it.) Ingredients: EGGS, BAKING POWDER, CHILI POWDER, SALT, COTTAGE CHEESE, GRATED JACK CHEESE, SOUR CREAM, DRAINED DICED GREEN CHILES, BUTTER. Notes: I USUALLY ADD SMALL PINCH OF GROUND CUMIN. CAN USE CHEDDAR INSTEAD OF JACK CHEESE.
