  • 400 g French beans
  • 400 g mangetout
  • 70 g unskinned hazelnuts
  • 1 orange
  • 20 g chives
  • 1 garlic clove
  • 3 tbsp olive oil
  • 2 tbsp hazelnut oil or other nut oil
  • coarse sea salt and black pepper

This was a delicious combination, and easy to make. I wasn't quite sure what to do with the rest of the orange after zesting it, but it did seem like the recipe could use the juice as well, so I put that in.

Green beans, hazelnuts and orange….some of my favourite foods combined in 1 dish.
There’s not much work involved in creating this dish: blanching some green beans and snow peas (the times given in the instructions worked perfectly even though I was using regular green beans instead of French haricots verts), toasting some hazelnuts, mincing the rest of the ingredients. Very, very nice. I had problems tasting the beans and mangetouts, though, as the taste of the oranges, garlic, and to a lesser extent the hazelnuts was slightly dominant. The preparation is really easy, too, as there are only a few things to do and you can easily prepare everything in advance and just assemble the salad when needed.
