Golden and crunchy on the outside, filled with gooey melted mozzarella, these fried treats are a fabulous way to use up leftover risotto.
I used the Basic Risotto for these, adding eggs, breadcrumbs and more parmesan cheese to the rice before shaping them and dredging them in more breadcrumbs. One thing I would do differently is chill the mixture before shaping as it was a little soft and messy to work with.
