My cornmeal was full of creepy crawlies, but I still had a hankering for cornbread. My masa came to the rescue with this recipe. I made it pretty much as described, except I used old dried out brown sugar (2T).
The flavor was very different - and the texture was much less crumbly, more like a dense bread.
I think the 2 eggs was 1 egg too many. I will tweak this recipe - I liked the flavor (a bit of tamale-like corn flavor), and fewer crumbs on the floor was a plus for me (but not for our dog)... Read more
