For me, this was every bit as good as the kale on toast. I was hungry for more, so decided to go on to the next recipe...
Because I liked the poached egg in the onion and tomato soup, I decided to poach the egg in the kale. I skipped the vinegar (thanks for the tip, southerncooker). I added the prosciutto, and again lots of black pepper. I also skipped the drizzle of olive oil. I'm sure it would have been good, but wanted the lower calorie option.
This is comfort food, pure and simple.

In need of a recipe for the excess of kale coming from my garden, I turned here. I fried the eggs separately first and then used them to top the kale. "Boiled kale" may sound like something to be eaten solely for the benefit of your health, but this is truly comfort food.

After taking a couple bites of the Boiled Kale on toast (collards in my case). I proceeded with the next recipe (this one) since it said prepare the soggy toast as described in the previous recipe then proceed. I decided to go with the fried egg. I enjoyed this one too but didn't care for the red wine vinegar that much. Still good but my preference would be without the egg and vinegar. I didn't have any prosciutto or I would have tried that as well.
