*There is a confirmed error in this recipe; the pudding, to thicken, should cook in the final stage for 55 minutes, not 30!

Other than the (huge) error made here, the pudding is good. Too bad the editing on the book wasn't! Arborio rice is a decent pudding choice - it keeps some chewiness instead of becoming mush.
