Made this for a group of 7 and everyone liked it.It was rich and filling. It would make a great side dish in the colder months.

I had to use dried chives and I used veggie stock to make it vegetarian but other than that I followed the recipe exactly. I love risotto and this is a good one. I will definitely make it again.

This made a delicious risotto. It had just what a risotto needs - rich flavor, perfect texture, and a great depth to the spicing.

I did have to make a few substitutions. I used shitake instead of porcini, and because my chives are under a foot of snow, I instead used green onions.

I wish I could give this recipe a 4 1/2. Two of us felt it was a solid 5, the 12 yr old didn't like it at all, and the fourth person gave it a 4 1/2.

I am likely to make this one again!
