I had to adapt this recipe since my other half does not like shellfish of any sort (his loss!). So I basically made a Potato, Corn & Bacon Chowder. I followed the recipe in the book, omitting the clams and going a little heavier on the potatoes. Also substituted half & half for the heavy cream. The fennel really makes this an interesting chowder. Perfect for these cold winter evenings!
