This is an unusual soup. I have not cooked red lentils before but they were easily found at Whole Foods. They were more pink than red. However after I had simmered the soup for 45 mins covered - the soup was golden colored. It looked like corn soup! I could taste the ginger, which I liked - but couldn't get over the color. Soup was ok - there are a lot of better ones in this book.
I have since learned that I don't know my ingredients very well - apparently red lentils lose their color when cook...
