Lovely and warming, and quite attractive, although I prefer the red pepper diced and not sliced, which looks better with the sweetcorn and sliced spring onion. Recipe doesn't specify size or amount of sweet potato but having made this you'll want a thick soup rather than a puree before you add the cream and other vegetables. Add water if the sweet potato is too thick.
