Quick, simple, filling, fairly healthy, and cheap to make. A few changes to the cooking instructions: Chop the pototoes into small cubes for quicker cooking. Soften the onions first, then sweat the leeks for about a minute or two. Simmer until the potatoes are JUST done, and roughly mash with a potato masher. If you follow the recipe, the potatoes and leeks overcook and you end up with a sludgy, grey-looking soup, which doesn't taste quite as good and looks disgusting.
