This tasted so amazing it made me want to weep. I'm so glad my husband decided to not even taste it ;D. This was my first time using a real vanilla bean - and it was so worth it. Also I used bosc pears, and they were perfect. Just as the recipe stated, after 50 minutes a paring knife slipped through with no resistance.
If you like pears, this recipe is a must.
Update: I've now made this several times, and with many different pears. Its always good.

Absolutely delicious. A simple but impressive-looking and -tasting crowd-pleaser. Studio apartment owners beware: if you haven't ever used real vanilla bean before, you may be surprised to find, as I did, that the fragrance is a little too strong for a small space. Opening a window is highly suggested, as is doing your prep work well before any guests arrive.

Oh yumm. Simple and delicious. Good on their own or with ice cream. And the smell in the kitchen while the pears are roasting is simply wonderful.
