Heidi has been my go to recipe maven lately and we have reveled in the delicious results! This recipe is no exception. I used coconut milk and coconut sugar/crystals, frozen fruit (bananas and blueberries). Topped with homemade almond milk the next day- so good. Will try making it with almonds and almond milk next time.

I made this recipe with a few modifications. I baked the oatmeal in muffin tins, so I mixed all of the ingredients together instead of layering them as the recipe describes. I used 1/2 cup of raisins in place of the berries and brown sugar in place of the cane sugar or maple syrup. The result was very tasty.

I found this too heavy for me. I prefer regular oatmeal with fruit on top so I won't make this one again.
