This is a good basic potato soup recipe that can be customized with various toppings, but was delicious without adding any toppings. Despite the title, the recipe does not use baked potatoes. I often make potato soup with baked potatoes, but as the recipe notes, you can retain potato chunks in the soup easier by boiling the potatoes since baked potatoes fall apart.
