An easy but impressive looking lunch dish. Success depends on having a mandolin to slice the tomatoes, and an ovenproof dish of the right size.

I have made this pie many times and absolutely love it - the cheesy scone-like topping is delicious, and it looks very impressive. I slice the tomoatoes by hand with no trouble. Make sure your dish has high sides becuase it will rise while it's cooking.
