These are great light and airy muffins with a wonderful summery citrus flavor. I had never thought of using ricotta in muffins but they are great in these. You get a nice crunch from the turbinado sugar sprinkled on top. Since the recipe calls for 2 tablespoons of the sugar and there are 12 muffins I sprinkled 1/2 teaspoon on top of each muffin. If you like lemon desserts then you should try this one.
