Buttermilk Roast Chicken

Ingredients:
  • 12 chicken drumsticks
  • buttermilk
  • vegetable oil
  • vegetable oil
  • 2 garlic cloves, bruised & skins removed
  • crushed peppercorns
  • Maldon
  • ground cumin
  • maple syrup
Notes: pre-heat oven to gas mark 7, put everything minus the extra vegetable oil in a freezer bag and squish it around, marinate in fridge or at room temp at least 30 mins or up to 2 hrs, put chicken in lined roasting tin with foil, drizzle extra oil over and roast for 30 mins until brown.

I really liked these. The ingredients gave the chicken a nice, gentle flavour. These can be eaten hot or cold and I can imagine them being a good thing to take to a picnic, as Nigella did in the episode of the show in which she made them. In fact, that's probably what they're perfect for.

Consists of 1.25kg of chicken drumsticks, marinated overnight in buttermilk (with maple syrup, cumin, salt and pepper), then baked in a hot oven. The chicken was juicy and very tender but not particularly flavoursome. I found it necessary to add quite a bit of extra seasoning. A nice accompaniment to the 'New Orleans Coleslaw' (p. 277).
