This was simple and quick to make and it was nice trying a potato salad without mayonnaise. There was lots of flavour due to the dressing, which consisted of olive oil honey, wholegrain and Dijon mustard as well as tarragon, parsley and chives. I definitely didn't miss the mayonnaise. I could see this going well with many dishes.
