  • 1/2 tsp light brown sugar
  • 1 1/2 tsp black pepper
  • pinch cayenne
  • 1/4 cup olive oil
  • 1/2 cup salted cashews
  • 1 3/4 pound boneless, skinless chicken thighs
  • 1 tsp kosher salt
  • 1/4 cup scallions, finely chopped
  • 2 tbsp cilantro stems, chopped
  • 3 garlic cloves, chopped
  • 2 tbsp dark rum
  • 1 large mango
  • 1 tsp cider vinegar
  • 1/3 cup cilantro leaves, chopped

Very delicious! We used salted peanuts instead of cashews, which worked very well. I missed some sauce to go with the rice, DB did not. Also, although the dish contains quite some mango's, I would serve it with an extra vegetable side dish. I found this dish difficult to locate - maybe Thai, or maybe Caribbean? No idea.
