This was an easy to make and quick supper. You have three enchilada sauces to choose from to make this one with and I choose the Tomato Jalapeno one. You can also choose from several things for toppings. I sprinkled green onion and put a dollop of sour cream on each of our servings. Next time I might also put some avocado and additional cheese on top. They suggest Monterey Jack, queso fresco or a combination of cheeses and I think any of those would be good but I used some pepper jack which also... Read more
