Very moist muffins, the orange zest lends a wonderful aroma combined with carrot and pineapple. Lovely texture and not too sweet.

Yay, you made them! And they still turned out really moist even with the canned pineapple. But really with all that fruit I guess they can't really be anything but moist. Did you not love the smell of the batter?

Yes, the smell of the batter was my favourite part! That orange zest is awesome.

So I didn't follow the rules at all with these, but they still turned out very lovely. They really do taste and smell exactly like sunshine. My big faux pas was the pineapple, which was supposed to be canned, but I went ahead and used fresh anyway. I only had a 1/4 cup of juice from that so I subbed in the other half with orange juice from the orange I zested. I don't think any of the changes I made effected the muffins, they had a crispy top, like the book said they would and only rose a little... Read more

I think my favourite part was smelling the batter while I was making them. Orange zest plus fresh pineapples smells amazing!

I didn't have any pineapple but made other muffins this morning instead. I will pick up a can this week at market and let you know how it goes.
