I've had my eye on these since I bought this cookbook two years ago. I finally had some pistachios and decided to jump on top of these. They were amazing! Very chewy, packed with flavour, and with beautiful, sweet, crunchy chopped green pistachios on top.

Mmmmmmmmm. I guess it's time to break out the bottle of never used rose-water that's sitting in my pantry!

Yes! There's a shortbread recipe in here too that has a rose water variation that's soooo good too. At least I think it's in here, otherwise it's vegan baking.

I freaking love shortbread. And I've never made vegan shortbread! I better get cracking, only 8 million recipes in my queue to try!
