  • 4 slices thick-cut bacon
  • 2 cups all-purpose flour, plus more for dusting
  • 2 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1 tsp. kosher salt
  • 1 tbsp. chopped, fresh chives
  • 6 tbsp. cold, unsalted butter, cut into small pieces, + melted butter for brushing
  • 1 cup grated colby or cheddar cheese
  • 1 cup buttermilk
