I really enjoyed this one. I bought a couple extra avocados when I got some for the guacamole so decided to try this too. I ate some on toast and some on a tomato as suggested by PW. It was great both ways. At first I was skeptical about spreading a bit more mayo and some Dijon mustard on the toast before adding the egg salad but it was very tasty that way with the avocado and egg.
