Thai Cucumber Salad

This would have probably been better had I had some smaller cucumbers. I had some from a neighbors garden and some of the seeds were a bit big. Daughter scooped them out. Also I didn't have the optional Thai or Serrano Chile so I used a bit of fresh jalapeño I had on hand. Some of the cucumber that touched the jalapeño was a bit spicy. This was a good salad though and I'll make again when I have better cucumbers. I was pleasantly surprised how good the chopped peanuts were on this. I dipped Hubby's before adding the cilantro since he doesn't like that.
